Persian Tomato-Cucumber Salad (Shriazi Salad)
Named after a city in Iran, this is the classic salad you’ll always find on the table. Packed with cucumbers, tomatoes and red onion, it’s the perfect simple side to add some freshness to the hearty stews of Persian cuisine.

4 Persian cucumbers, diced
3 vine ripe tomatoes, cored and diced
1/2 red onion, diced
1 tablespoon fresh mint, minced
2 tablespoons lemon juice
2 tablespoons olive oil
Kosher salt and freshly ground black pepper, to taste
- In a large bowl, toss all the ingredient to combine. Let sit for 10 minutes, then toss again to distribute the dressing and serve.
